What is difference between Evaporated and Condensed Milk? There is literally no difference between evaporated milk and condensed milk. However, there is a significant difference between evaporated and condensed milk in terms of the sugar used to sweeten condensed milk.


Difference between Evaporated and Condensed Milk

In normal culinary terms, sweet condensed milk always refers to condensed milk and most brands of condensed milk are sweetened. In the same way, in this article we will refer to sweetened milk sweetened as condensed milk. While unsweetened condensed milk is known as evaporated milk.

Evaporated milk is made in factories in a process in which almost 60% of water contained in regular or regular milk is extracted. It is homogenized and sterilized to provide you with more time to live. According to FDA standards, evaporated milk needs a minimum milk fat of 7.9% and a minimum milk of 25.5%.

Condensed milk is also processed in the same way. It evaporates to eliminate at least 60% of the water found in the milk. While evaporating, the milk is homogenized after evaporation and the sugar is added to condense the milk. Because sugar acts as an inhibitor of the growth of microorganisms, the process of sterilization of condensed milk is less rigorous than that of evaporated milk. According to FDA standards, condensed milk must contain at least 8% milk fat, a minimum of 28% milk and between 40-45% sugar content.

Due to their concentrated nature, both types of milk are rich in calories. However due to its sugar content, condensed milk is higher in terms of calories when compared to evaporated milk.

Both types of milk come in different presentations, such as reduced in fat, whole or light. Some brands of condensed milk also come in different flavors such as chocolate.

Due to their high sugar content, these types of milk cannot be changed or replaced during the cooking process. Most people use condensed milk for desserts and drinks like Vietnamese coffee. People also use it for dessert called dulcet de leche where condensed milk is caramelized.

On the other hand, evaporated milk is used as a substitute for regular milk in coffees and teas. It is also used in recipes such as dressings, casseroles, soups to add a creamy flavor and texture to the final dish.
